Orange Pomegranate Salad
Fennel and Fire Spices: Fennel and Fire Citrus Peppercorn, Fennel and Fire Bolivian Rose Andes Mountain Salt, and Fennel and Fire Organic Super Seed Healthy Blend.
If you are like me, the new year is a time for clean eating. This beautiful orange pomegranate salad was create from Christmas Eve Dinner leftovers. What a healthy yummy start to the new year!
First I made the Orange Pomegranate Salad Dressing:
We had a left over orange that had been zest for wassail. I cut it in 1/2. Squeezed 1/2 of the juice in a bottle container with a cork lid. I cut the other 1/2 into chunks and set aside. Next I got the pomegranate juice that had been used in a cognac cocktail (boy was it good). I poured an equal amount of pomegranate juice as the orange juice in the container. Next I added about a teaspoon of sherry vinegar (which is my favorite vinegar to have on hand). Next I added a small squeeze of local honey ( about 1/4 teaspoon). Next I twisted about 10 grinds of Fennel and Fire Citrus Peppercorn into the dressing and a pinch of Fennel and Fire Bolivian Rose Mountain Salt. Next, I added just a bit of dijon mustard (tip of the knife - about 1/4 teaspoon).
Put the cork on the bottle and shake well.
I slowly added La Tourangella Avocado Oil (my favorite oil from Stratton's Market) only about a 1/2 tablespoon as I was trying to cut the fat calories. I added a little oil shook, repeat. This creates one of the freshest healthy salad dressings. I will have enough for about three or four salads.
Next I build the Orange Pomegranate Salad:
Place crisp romain lettuce (I use Fenugreen, Fresh Papers to help keep it fresh) in bowl.
Top with orange chunks.
Next I chopped some left over pickled squash. (I know, it must be a southern thing, but every party I have an urge to put out a pickled platter. This leaves me with having left over jars taking up space in the fridge for months. But gives me lots of great additives for many meals.)
Now I add the dressing and toss the salad. Finally I add the pomegranate seeds (yes I always buy 2 or 3 pomegranate each holiday). I will blog how I deseeded them next. I then add a healthy tablespoon of Fennel and Fire Organic Super Seed Blend.
And finally twist about 10 more Fennel and Fire Citrus Peppercorn on the salad.
There you go: A great healthy salad to start the new year.
