SOUTHERN SPICY CHICKEN SALAD
I served this chicken salad at the Fennel and Fire Crafting House and got nothing but
"Oh my, that is so good"! It's a super simple recipe and quick to throw together. You may poach your own chicken breast or buy a high-quality rotisserie chicken. Make sure you chop the chicken into fairly small chunks so that the salad will come together.
To make it Southern, we added Fennel and Fire Spicy Chicken seasoning, chopped pickled okra (from a jar), chopped piquillo (from a jar), and chopped jalapenos (from a jar) to give it a southern twist.

In a large bowl mix mayo, lemon juice, lemon zest, mustard, Fennel and Fire Spicy chicken spice, until combined. Add the remaining ingredients to the bowl. Toss to combine. Serve cold or at room temp. Make sure to refrigerate unused portions.
